I feel like I recently discovered a top secret salad dressing that no one here really knows about. Now, I can totally be wrong and I probably am, but have you ever heard of Nutritional Yeast? Maybe you have. All I know is that I haven’t but now that I have, I am hooked! Addicted. Obsessed. While we were in Whistler, I came about The Green Mustache’s Buddha Bowl and it was love at first taste. Every ingredient was super frigging fresh and then of course there was the dressing which I like to refer to as “Liquid Gold”. I made the sweet cafe girl give me the ingredients to the entire bowl and then researched the best Liquid Gold recipe I could find. I literally replicated the one I had in Canada and it was OMG ridiculous. You’re going to want to make out with it…but most likely no one will not want to make out with you afterwards because there is a copious amount of delicious garlic in it. You’re welcome.
LG is vegan as well as gluten free so that’s a big plus for any TSPeeps with dietary restrictions. As a matter of fact, you can make the entire bowl vegan and GF as well. I’m tapping my toe in the vegan pond and I am happy to find there are so many delicious meals that don’t include animal products. (Side note: I am in love with cheese and Italian cured meats. I’m a huge greaseball. Hence why the idea of veganism is very hard for me to wrap my entire heart and head around.) I am not jumping in head first, just getting a feel around for what’s up in the vegan world. So far I’m a lookin’ and I’m a likin’.
Nutritional yeast is good for you because:
– it’s an excellent source of folic acid; which is important for cell maintenance and production
– it’s high in fiber
– it’s high in protein. 2 tablespoons contains 9 grams of protein
– it is a huge source of Vitamin B-12 which is a plus for our red blood cells
Recipe for Liquid Gold:
(easiest dressing recipe in the world!)
– 1/2 cup of nutritional yeast
– 1/3 cup of water
– 1/3 cup of tamari (GF soy sauce)
– 1/3 cup of apple cider vinegar (Braggs is my favorite)
– 1/4 cup of olive oil
– 1 tablespoon crushed garlic
– a few drops of sesame oil
Combine everything in a food processor or use a hand blender to mix all of the delicious ingredients together and voila! You have yourself some Liquid Gold! Toss it in a mason jar and store in the refrigerator.
From there you can do whatever your heart desires. I worship a bowl full of fresh ingredients that I know are PACKED with the good stuff. Gimme, gimme! I added one cup of cooked quinoa, greens, massaged kale and some avocado along with some super healthy bits and pieces! Here is how I made my Buddha Bowl. Get creative, have fun and use what you have. Enjoy!!! (Next time I’m totally adding currants!)
Walnut bits, salted pumpkin seeds, chia seeds and hemp hearts (good for you and an energy booster!).
Ruby red grapefruit and goji berries. Soak your berries in a cup of water for 10 minutes before tossing them in.
Sprouts! Radish, kale, sunflower, mustards, alfalfa and red clover. Peeled organic carrots.
I mixed it all together and it was hands down THE best salad, ahem, I mean Buddha Bowl, I’ve ever had! Anthony loves it too! Oh and PS. I’ve read that some people pour LG all over popcorn…I’m in!
