Well first, let me introduce myself, I am Erika Nolan, proud wife, mom, sister & daughter by day. Personal Stylist, Pilates instructor, Yogi and absent blogger by night. So, I guess that’s why I’m here. What better way to reignite my writing than by guest blogging on the raddest blog of all, The Sister Project. It was love at first sight when I met Lauren. We were in a yoga class together months ago and became fast friends. She just gets me. We love to talk music, fashion, yoga, healthy & wellness. But today, it’s about food. One of our other favorite topics.
By now we are all on fast forward in the midst of the Holiday hustle. Counting down the days till the next big party, celebration or Christmas feast. Or are you feeling the post Thanksgiving bloat? Well, either way you will be diggin these simple treats. I like to call them Energy Balls, but I live in a house of testosterone, with 3 boys, so honestly the minute I mention balls the jokes roll in faster than the speed of light. So for sake of argument, let’s just refer to them at Vegan Energy Bites.
It all started when I inhaled about a half a dozen similar snacks at our anniversary party at Yoga Six. Despite having chia seeds stuck in my teeth for hours after, they were the best little pop of energy a girl could ask for in a pinch. I said to myself, I could make these. So, I saved the ingredient list, did a little google search and made them a few times before I perfected my recipe. Plus my boys, who swim six days a week, need to be feed on the regular. Any quick, simple and nutritious snack is a winner in our house. And if it includes peanut butter and chocolate, who could possibly turn it down? And did you know that oats are naturally gluten free? Except when harvested and cleaned usually the other grains linger so they can’t call them gluten free. Either way, there are lots of options out there so use the oats that best suit your lifestyle.
I adapted this recipe from several different sources and like my mother always said “If you change one ingredient or one step in a recipe, you can call it your own!”. There you have it, I always listen to my mother. And on that note here is the recipe for the tastiest Vegan Energy Bites around. Now, that’s “Chique”. Vegan Energy Bites
1 ½ cups rolled oats
½ heaping cup of natural peanut butter
⅓ cup maple syrup
⅓ cup vegan mini chips
2 tablespoons chia seeds
2 tablespoons coconut flakes (a little extra for rolling)
1 teaspoon vanilla extract
Put all the above ingredients in a large bowl. Stir until mixed thoroughly. Place in the fridge to cool for about 20 minutes. While the batter is cooling, cover the bottom of a small pan with more coconut flakes. Turn on medium heat and toast the coconut. Let it cool slightly or it may melt the chocolate chips. I used a small ice cream scooper to measure the amount for each bite so that they would be consistent. Roll batter into balls and then roll in toasted coconut. I also did some plain coconut ones and rolled some in cocoa powder, but you could even roll in finely chopped nuts if you fancy. I store mine in the fridge because I like them a little chilled, but they can certainly stay room temperature too. Yields about 20 energy bites depending on how big you like your balls.
