Simple Sauce

Here at TSP, it is our goal to make sure we are serving up some mouthwatering food and drink recipes that not only taste great, but are so good you’ll want to share with your friends too! Don’t worry–we’ve got you. We are all busy little beavers and time is always of the essence, so recipes with a short list of ingredients but taste like they have been cooking for hours are our jam.  Let us start real slow with one of our favorite pastas served with a delicious simple sauce.

This recipe comes straight from our Italian relatives. Years ago, they came to America to visit us and were offended by the hot dogs and stuffed pizza we tried to force-feed them and demanded we take them food shopping. Our cousin cooked every meal we ate until they returned to Italy. We suffered from momentary guilt and then we went ahead and shoveled it in.

Simple sauce is no joke. It is as easy as its name makes it sound. It can be whipped up in a matter of minutes and the kids love it. It is my go-to dish when we have surprise guests or when the cousins are over. Sometimes, I’ll add meatballs, other times, a simple salad. I always have the ingredients on hand because everyone loves it and I know this because there is never any left over.

List of ingredients

1 box pasta

1/2 yellow onion, chopped

1 28 oz. can tomato sauce (I prefer Dei Fratelli)

1/4 C. olive oil

2-3 tbsp. butter

salt

Fresh Parmesan

Step 1 ~ Pour the olive oil into a pot over medium heat. When the oil is hot, add the chopped onion and let it cook until the onion is translucent. This should only take a couple minutes.

Step 2 ~ Once your onions are cooked, pour in the can of tomato sauce. Top with pats of butter and let them melt into the sauce.  Add a generous amount of salt (1/2 tablespoon). Stir periodically. Be careful not to let the sauce burn.

Step  3 ~ Boil water for pasta.

Step 4 ~ When the pasta is done, drain and then toss the sauce with the pasta.

Step  5 ~ Plate and sprinkle with grated Parmesan.
