The Perfect Coffee Cake

We talk a lot about cozy living on the blog. It’s such a delightful little lifestyle and there are so many ways to create your most satisfying comfy experience. One of the things we are always encouraging is to “eat the damn cake.” Cake comes in all forms and flavors which means there is a type for everyone. Besides, what are you supposed to have with your afternoon coffee? If you are like Lauren, your cake probably looks more like scone and is as dense as the forest behind our mom’s house. But if you are like me, then chocolate chips are a requirement, and it has to be sweet, but not too sweet!

This recipe is one our mom made often when we were kids. I think we are all getting a little nostalgic. Eating her food is a way for us to feel close to her. Her famous cake has every ingredient society says we aren’t supposed to have: sugar, dairy, gluten. We say screw it. Eat the damn cake. Share it with your family after dinner or have it with coffee for breakfast. Bring a hunk to work and gift it to your co-workers. Whatever, there are no rules here. Well, there is one. Just eat the cake. Relish in that moment and enjoy the way it tastes and how you feel after you indulge.

Don’t worry about the calories. Simply enjoy the moment. Life is far too short to do otherwise.
Ingredients:

1/4 lb butter

1 1/2 c. sugar

1 1/2 tsp. vanilla

3 eggs

3 c. flour

1 Tbsp. baking powder

1 1/3 tsp. baking soda

16 oz. sour cream

powdered sugar

Center and Topping Ingredients:

1/2 c. sugar

1 tsp. cinnamon

12 oz. chocolate chips

Preheat oven to 350 degrees.

Cream together butter, sugar and vanilla. Add each egg, one at a time. Blend in flour, baking powder and baking soda. Next, add sour cream and combine all ingredients.

For the topping, combine sugar, cinnamon and chocolate chips.

Pour half of the cake batter into a prepared bundt pan. Then pour half of the chocolate chip, cinnamon sugar mixture. Top with the rest of the cake batter. Finally, spread chocolate chip, cinnamon and sugar mixture over the top.

Bake for 45 minutes. Let cool. When the cake is completely cooled down, flip over so chocolate chip top become the bottom. Sprinkle with powdered sugar. Slice and enjoy with your favorite cozy drink.

    This is gonna be my next cake I bake. It sounds wonderful. I’m doing low carbs and low sugar but this is one cheat I’m looking forward to.
