Pastina

Tiny pasta cooked in broth, egg, and parmesan cheese.

Ingredients

  • 2 cups chicken stock
  • 1/2 cup pastina I prefer Barilla
  • 2 eggs, lightly beaten
  • 1/2 cup grated parmesan cheese
  • 2 tbsp butter
  • salt and pepper, to taste

Instructions

  • Pour chicken stock into a small soup pot and bring to a boil.
  • Add pastina and cook per the instructions. Mine took 6 minutes.
  • While the pastina is cooking, beat the eggs.
  • After the pastina is done cooking, turn off the heat and slowly add the eggs. Stir continuously. The eggs will cook as you stir.
  • Add the parmesan cheese, butter, salt and pepper and serve!
